Hash Brown Potatoes

Hash Brown Potatoes

2 tablespoons shortening
6 raw potatoes, grated
1 onion, minced
1 egg, lightly beaten
Salt and pepper, to taste

Melt shortening in skillet. Mix remaining ingredients. Spread evenly in skillet. Saut? until golden brown. Turn and brown on other side. Cut into wedges and serve.

Basic Meat and Potatoes Dinner

For 10 months and older.

1/2 cup ground or cubed cooked meat
    (chicken, turkey, beef, or pork)
1/4 cup cooked vegetable pieces (peas,
    carrots, squash, green beans, corn)
1/4 cup cooked rice, potato or enriched pasta
1/4 cup milk or formula

Combine and blend or mash all ingredients until few lumps remain.

Combinations
Beef, peas and potatoes
Chicken, carrots and rice
Beef, squash and macaroni
Liver, green beans and potatoes

Twice Baked Potatoes

Twice Baked Potatoes

For 10 months or older.

1 washed baking potato
1 egg (do not use the egg white until
    your baby is 12 months old
)
2 tablespoons shredded mild cheese
1 teaspoon grated Parmesan cheese
2 tablespoons formula or milk
1/2 teaspoon butter

Bake potato at 400 degrees F for 1 hour or until softened. Check firmness occasionally. Let potato cool for about 15 minutes.

Scoop out the potato, saving the potato skin as a dish if desired, and mash with a fork. Add egg, formula or milk and cheese. Pur?e or use a mixer to beat out all the lumps. Bake again at 400 degrees F in the potato dish set on a cookie sheet or in a muffin tin for 15 minutes. Cool and test temperature before serving.
