Curried Chicken or Turkey Balls

2 pounds ground, raw chicken or turkey
1 teaspoon onion powder
1 tablespoon curry powder
1 teaspoon seasoned salt
1/4 teaspoon MSG
1 egg, lightly beaten
2 teaspoons salt
2 teaspoons lemon juice
2 tablespoons fine bread crumbs
1/4 cup flour
1/4 cup butter

Combine all ingredients except flour and butter; mix well. Form into small, bite-size balls. Roll lightly in flour and saut? in butter 15 minutes or until golden brown on all sides. Serve in a chafing dish or candle-warmed casserole in Creamy Curry Sauce. Have plenty of wooden picks handy.

Makes about 90.

Creamy Curry Sauce
2 tablespoons butter or margarine
2 teaspoons curry powder, or to taste
2 tablespoons all-purpose flour
1/4 teaspoon salt
1/4 teaspoon white pepper
1 1/4 cups milk

Melt butter; stir in curry powder. Cook over low heat, stirring, 2 to 3 minutes. Add flour, salt and pepper, mixing until well blended and smooth. Cook until bubbly, stirring constantly. Remove from heat; stir in milk. Cook, continuing to stir, until thickened.

Turkey Dressing Casserole

Turkey Dressing Casserole

2 to 3 cups roasted turkey
Leftover dressing
Gravy
Buttered bread or cracker crumbs

Dice turkey. Fill a 9 x 13-inch buttered pan 1/2 full with leftover dressing or a package of dressing made according to directions. Spread 1/2 of gravy over dressing. Sprinkle with all of diced turkey. Top with remaining gravy and sprinkle with buttered bread or cracker crumbs.

Gravy: If there is no leftover gravy, make with 3 cups chicken broth thickened with flour and boiled until gravy consistency.

Bake at 350 degrees F for 1 hour.

Turkey Dinner

Turkey Dinner

For 10 months and older.

1 to 2 ounces browned (cooked) ground turkey meat
1 1/2 cups water
1/2 cup enriched, white uncooked rice
1 carrot, peeled and diced or grated
1/4 cup peas
1 small dab butter

Heat water and butter in small saucepan over medium heat. Add rice, turkey, peas and carrots to hot water. Reduce heat and simmer, covered, for 20 minutes.

Stir and let rest 5 minutes, covered. Cool before serving.
